MANAHAWKIN – Despite some of the recent closures residents have seen in the Manahawkin area of late – such as Kmart, Subway, and AC Moore – new businesses are slowly beginning to fill these vacancies. 

  A Bubbakoo’s Burritos, a popular burrito joint, will be moving into the Stafford shopping plaza on Route 72, filling Subway’s vacancy near the Dunkin’ Donuts and Golden Jade Chinese restaurant. 

  Bubbakoo’s is a local chain with Jersey Shore roots, serving up burritos, tacos, and quesadillas in a choose-you-own style similar to Chipotle. The burrito restaurant got its start in Point Pleasant in 2008. In the last decade, the spot has expanded to over 20 locations throughout the Jersey Shore including Bayville, Toms River, and Brick in Ocean County. 

  A sign recently went up in the window of the former Subway location stating “Coming Soon” with the Bubbakoo’s Burritos logo. 

  Stafford Township’s cuisine scene is expanding, with the recent approval of both a Chick-fil-A fast food restaurant and Panera Bread along Route 72 West in addition to Bubbakoo’s.
